It's Day 2 and things are going fairly well, except that I went a bit over carbs today. My daily goal is 20g and I hit 31. One reason is that I made an assumption on the number of net carbs for sugar free Jell-O pudding. I also had artichoke and red onions on a salad for lunch. Had I not eaten those items, I would have been fine.
The menu today consisted of:
- Mustard Scrambled Eggs (2 net carbs)
- Coffee (0 net carbs)
- Spinach Salad with red onion, artichoke, broccoli, and olives (19 net carbs)
- Lipton Iced Tea (0 net carbs)
- Baked turkey/italian sausange meatballs and broccoli (2 net carbs)
- Reduced fat cheddar cheese stick (1 net carb)
- Sugar Free Chocolate Jello Pudding Cup (13 net carbs)
The total net carbs for today is 31. While I went over, I did learn quite a bit today. The reason pudding has so many net carbs is because it has food starch in it and very little fiber. I also learned that I need to stay away from olives and artichoke in salads.
In order to prepare for upcoming means I prepared a few recipes tonight. Besides the meatballs/broccoli for dinner, I made a "loaded egg salad" filling for lettuce wraps and a pot of creamy mushroom soup. We've also got a lot of greens for salads as well, so there'll be some steak, chicken, and roast turkey on the menu.
Weight is starting to come off....unless my scale doesn't match the doctor's office. I've lost 2 pounds and am loving the food so far. Blood pressure has dropped as well.
