Alternative Pizza

Last night I posted on Facebook & Twitter that I made and subsequently ate 1/2 of a Chicken Thai Pizza.  I've received numerous requests for the recipe, so I added a cookbook to my site and posted the recipe here.  You can make preparation time for this recipe a bit quicker by using a Boboli or other pre-baked crust, a rotisserie chicken, and the right kitchen tools, such as the Oxo Good Grips Box Grater or the Progressive International 6-Piece Grater Set.  I personally add a bit of mozzarella cheese and usually don't include the peanuts because we don't have them in the house.  It takes about 15 minutes to prepare the pizza and 10 minutes to cook it, and it goes quite nicely with an ice cold beer or a tall glass of milk.  Enjoy!

 

What Do You Do With a Leftover Veggie Tray?

Thanksgiving is a time to give thanks for what we have, spend time with family, and eat great food.  But what is one to do with all those leftovers?  In our case, the leftovers included a veggie tray with carrots, broccoli, grape tomatoes, peas in the pod, and celery.

Chicagoland District 30 Toastmasters Fall Conference Photos Available

If you follow me on any of the social networking sites, you know that I've been taking a digital photography course this quarter at DePaul University.  I love the class, and the photo bug has bitten me hard.

I attended the Chicagoland District 30 Toastmasters Fall Conference last weekend and took photos.  Our combined total between three photographers was around 900 photos.

Piece Airs on The RAIN Report

I was really happy to learn that a piece I did in the "You Think You've Got Problems" file aired on the August 21, 2009 edition of "The RAIN Report," produced by fellow Toastmaster and Amateur (Ham) Radio Operator Hap Holly (KC9RP).  The piece chronicles flooding experienced by another amateur earlier this spring, as reported in a newsgroup posting.  Click here to listen.  I hope to do more of this in the future.  Thanks for the opportunity Hap!
